Method
- Grind the almonds with the sugar until you have a smooth paste.
- Add the orange blossom water, the cinnamon and a little butter, then knead until the paste holds together.
- Open each date along one side and carefully remove the pit without splitting it in two.
- Shape small pieces of almond paste and use them to fill each date.
- Decorate the top of the filling with ground pistachios, coconut or half an almond.
- Arrange the stuffed dates on the serving plate. You can keep them in the fridge until it's time to serve.

Choose large, soft dates: they're easier to stuff and look prettier.
