Almond-Stuffed Dates, a No-Bake Ramadan Sweet

Pitted dates filled with fragrant almond paste and topped with pistachio or coconut. A refined little sweet that comes together with no baking, in just minutes.

المقادير
  

  • 500 g large soft dates (Medjool)
  • 250 g blanched almonds
  • Half a cup of powdered sugar
  • 1 tablespoon orange blossom water
  • A few drops of melted butter
  • 1 teaspoon cinnamon (optional)
  • Ground pistachios or coconut for decorating

Method
 

  1. Grind the almonds with the sugar until you have a smooth paste.
  2. Add the orange blossom water, the cinnamon and a little butter, then knead until the paste holds together.
  3. Open each date along one side and carefully remove the pit without splitting it in two.
  4. Shape small pieces of almond paste and use them to fill each date.
  5. Decorate the top of the filling with ground pistachios, coconut or half an almond.
  6. Arrange the stuffed dates on the serving plate. You can keep them in the fridge until it's time to serve.

ملاحظات

Choose large, soft dates: they're easier to stuff and look prettier.
You can tint the almond paste with a little food coloring for a festive touch.
They keep for several days in the fridge in an airtight container.
