Easy Creamy Pumpkin Soup

  • Half a pumpkin (squash), cut into chunks
  • One onion, chopped
  • One carrot, sliced
  • One garlic clove
  • One teaspoon of ginger
  • Salt, pepper, and nutmeg
  • Vegetable stock or water
  • Oil or butter
  • Cooking cream for serving

Method
 

  1. Sauté the onion and garlic in the oil until softened.
  2. Add the pumpkin, carrot, and ginger, and stir for a few minutes.
  3. Pour in the stock or water until the vegetables are just covered, then let it simmer until the pumpkin is completely tender.
  4. Blend the soup until smooth and creamy.
  5. Return it to the heat, season with salt, pepper, and nutmeg, and adjust the consistency with a little water.
  6. Serve hot with a swirl of cream, a few toasted pumpkin seeds, and some toasted bread.

Blend the pumpkin thoroughly for a creamy texture.
