Moroccan Bissara with Dried Fava Beans and Olive Oil

A thick Moroccan soup made from mashed dried fava beans, seasoned with garlic, cumin and paprika, and served piping hot with a drizzle of olive oil and bread.

المقادير
  

  • 2 cups dried split fava beans, soaked overnight
  • 4 garlic cloves
  • 1 teaspoon cumin, plus extra for serving
  • 1 teaspoon sweet paprika
  • A pinch of hot chili (optional)
  • Salt
  • Olive oil
  • Water

Method
 

  1. Drain the soaked fava beans and rinse them well.
  2. Put the beans and garlic in a pot, cover generously with water and bring to a boil over medium heat until they fall apart completely (about an hour).
  3. Add the cumin, paprika, salt and a little olive oil.
  4. Blend the beans thoroughly with a blender or potato masher until smooth and thick, adding hot water to reach the consistency you want.
  5. Let it simmer gently for a few minutes, stirring, until everything is well combined.
  6. Serve hot in bowls with a sprinkle of cumin and paprika, a drizzle of olive oil and bread.

ملاحظات

The longer the beans cook, the smoother the bissara becomes.
Adjust the water to the thickness you like; bissara firms up as it cools.
Good olive oil and cumin are the secret to its flavor.
