Moroccan Maakouda: Crispy Fried Potato Fritters

Patties of spiced mashed potato, dipped in a light batter and fried until golden, a much-loved snack during Ramadan.

المقادير
  

  • 1 kg potatoes, boiled and mashed
  • 1 bunch coriander, chopped
  • 3 cloves garlic, crushed
  • 1 teaspoon each of turmeric and cumin
  • Salt and pepper
  • 1 egg
  • For coating: flour + 1 beaten egg
  • Oil for frying

Method
 

  1. Mash the boiled potatoes while still warm until smooth.
  2. Add the coriander, garlic, spices, salt and egg, and mix until the dough holds together.
  3. Shape medium-sized patties with your hands.
  4. Roll each patty in flour, then in the beaten egg.
  5. Fry the patties in hot oil until golden on both sides.
  6. Drain on kitchen paper and serve hot with lemon wedges.

ملاحظات

Make sure the potatoes are mashed really well, with no lumps.
If the dough is too soft, add a little flour or breadcrumbs.
Hot oil gives a crisp crust without soaking up too much grease.
