Quick Italian Tomato Pasta

Spaghetti in an easy tomato sauce with garlic, olive oil and basil. A classic Italian dish that comes together in minutes with just a handful of ingredients.

  • 300 g spaghetti
  • One can of peeled tomatoes or 4 fresh tomatoes, grated
  • 3 cloves of garlic, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon sugar (to balance the acidity)
  • Fresh or dried basil
  • Salt and pepper
  • Grated parmesan, to serve

Method
 

  1. Cook the spaghetti in salted water until al dente, keeping a slight bite, then set aside a little of the cooking water.
  2. In a pan, heat the olive oil and gently fry the garlic until fragrant, without letting it burn.
  3. Add the tomatoes, sugar, salt and pepper, and let the sauce simmer until it thickens slightly.
  4. Stir in the basil, then toss the spaghetti with the sauce and a splash of the cooking water until well coated.
  5. Leave it on the heat for a minute, until the sauce clings nicely to the pasta.
  6. Serve hot with parmesan and a few basil leaves.

ملاحظات

The pasta cooking water helps the sauce stick to the spaghetti.
A pinch of sugar balances the acidity of the tomatoes.
Don't overcook the pasta; keep it al dente.
