Creamy Tahini Hummus, Restaurant-Style

A creamy dip of mashed chickpeas blended with tahini, lemon and garlic, finished with olive oil and paprika and served with bread.

المقادير
  

  • 2 cups cooked chickpeas (or one ready-to-use can)
  • 1/4 cup tahini
  • Juice of 1 lemon
  • 1 garlic clove
  • Salt
  • Ice water
  • Olive oil and paprika, to serve

Method
 

  1. Add the cooked chickpeas, tahini, lemon juice, garlic and salt to the blender.
  2. Blend until the mixture starts to come together.
  3. Gradually stream in the ice water while blending, until you reach a smooth, creamy consistency.
  4. Taste and adjust the salt and lemon.
  5. Spoon the hummus onto a plate and spread it into swirls using the back of the spoon.
  6. Garnish with a drizzle of olive oil, a sprinkle of paprika and a few whole chickpeas, then serve with bread.

ملاحظات

Streaming in ice water as you blend gives a creamy texture and a lovely pale colour.
Peeling the chickpeas makes it incredibly smooth, if you're after perfection.
Adjust the lemon and garlic to suit your taste.
