  • 2 cups flour
  • Three quarters of a cup of sugar
  • 1 tablespoon baking powder
  • A pinch of salt
  • 2 eggs
  • 1 cup milk
  • Half a cup of oil
  • Vanilla
  • Half a cup of chocolate chips

Method
 

  1. Whisk together the flour, sugar, baking powder and salt.
  2. Beat the eggs with the milk, oil and vanilla.
  3. Pour the wet mixture over the dry and stir just a little, until the flour is moistened.
  4. Fold in the chocolate chips gently.
  5. Divide the batter among the muffin tins, almost to the brim.
  6. Bake at 190°C for about 20–22 minutes, until risen and cooked through (test with a toothpick).
